Smoked Pumpkin Soup Cooked on the Weber Grill

Winter is the time when we crave warm, comforting foods, and nothing is better than a bowl of soup. Pumpkin soup is a classic winter dish that warms you up from the inside out. But have you ever tried smoked pumpkin soup? Today, we're going to show you how to make a delicious smoked pumpkin soup cooked on the Weber grill. This recipe is super easy to follow, requires minimal ingredients, and will be a great addition to your winter menu. So, let's get started!
 

Ingredients

  • 1 medium-sized pumpkin
  • 3/4 cup of diced bacon
  • 1 small diced onion
  • 2 tablespoons of butter
  • 1 tablespoon of Bulldozer Hogfather rub
  • 1 tablespoon of Bulldozer Spog rub
  • Salt and pepper to taste
  • Cream (optional)

Preparation

  1. With a sharp knife, cut off the top of the pumpkin and remove the seeds and pulp.
  2. Use a sharp knife to make an outline on the pumpkin, and cut out the pumpkin lid at a 45-degree angle.
  3. Dice the onion and bacon.
  4. Melt the butter in a pan and add the onion and bacon. Fry until cooked.
  5. Mix the Bulldozer Hogfather rub and the Bulldozer Spog rub together.
  6. Season the inside of the pumpkin with the rub mix and salt and pepper.
  7. Fill the pumpkin with the cooked bacon and onion mixture.

Smoking the Pumpkin

  1. Prepare the Weber grill for smoking - set it up for indirect cooking at 350°F. Add some wood chunks to the coals
  2. Place the pumpkin on the other side of the grill, away from the charcoal and coals.
  3. Cover the grill with the lid and let the pumpkin smoke for 1 hour.

Cooking the Soup

  1. Remove the pumpkin from the grill and take out the cooked bacon and onion mixture.
  2. Add the mixture to a large pot.
  3. Scoop out the cooked pumpkin flesh and add it to the pot.
  4. Add water to the pot until it covers the pumpkin mixture.
  5. Bring the mixture to a boil, then reduce the heat and simmer for 30 minutes.

Blending the Soup

  1. Use a hand blender to blend the soup until it's smooth and creamy.
  2. If the soup is too thick, add more water until it reaches the desired consistency.
  3. Add cream to the soup if desired.

Serving the Soup

  1. Pour the soup into bowls.
  2. Serve with crusty bread.
  3. Eat up!
